Every Afghan kitchen keeps a fire at its heart. Ours began in Kabul, where our family cooked palaw for weddings, folded mantu by the hundred, and grilled koobideh over coals from morning to night.
When we made Christchurch home, the recipes came with us - written in no book, measured by hand, seasoned by memory. Afghan Ember is where that fire burns now.
Everything is cooked the slow way: stews that simmer for hours, naan baked to order in the tandoor, rice steamed with saffron until every grain stands apart.
Every kebab meets real fire. No gas, no electric grills, no shortcuts - just hardwood charcoal lit fresh each day.
Halal certified meat from local butchers, produce from Canterbury growers, spices ground in small batches.
